
Last fall, my mom and sister went to a farm and got a half bushel of apples for me. They have been keeping nicely on our covered porch, but it was time to do something with them. I decided to start out the 2026 canning season with some canned cinnamon-sugar apples. My grandson loves them.

Last summer, I didn’t can much at all. I had so much left over that I still have a very full canning cupboard, but some things are actually getting low. Finally. That turned out to be a big blessing as our summer turned out to be one of the craziest summers we’ve lived through in some time.
First, a close family member had an extremely serious medical procedure which required a lengthy hospitalization. We were happy to help with their family as we could. Just as things were settling with that situation, our grandson, who is now 5, was hospitalized and we found that he has type 1 diabetes. Even though I am a type 1 as well, we struggled greatly getting used to his normal.
They are amazing up at the hospital where we go for all his appointments. We have to travel a little ways for these every three months because there are no child endocrinologists in the city where we live, but we have been very impressed at the amount of time and energy they have put in with us and him to make sure we all got what we needed to take care of him. He has practiced giving shots to every stuffy possible whenever he goes up there–one of his diabetes educators sets him up with saline solution and syringes every time he goes. At first, he was on shots, but is now on an insulin delivery system that we change every 3 days, which makes it so much easier!

I used my peeler to get them all peeled and sliced and put them in the jars. They only take 20 minutes to water bath can in pints and they were quickly done.
I made apple crisps with the rest of the apples. One was for a young adult group my sister and I cook for and the other one was for the family. I feel very happy that the apples lasted so long and that they were all put to good use. They were so sweet and good, even this many months later.

Thank you! The first adventure was remembering all the ins and out of getting into the back end of my blog! There had been a couple of updates with a few changes. Thankfully nothing earth-shattering. But, still different. I hope to blog more frequently again. That would mean my life is settling down and that’s a good thing!

Even with a bunch of leftover desserts from a church potluck, those young adults slicked up most of the huge one I sent and our family did the same to ours. I just hadn’t made one for such a long time. I’m sorry you had medical adventures, too. It’s never easy.
